Description
Aquiares Estate, meaning "land between rivers" in the Huetar indigenous language, is Costa Rica's largest farm and home to 1,800 residents. Known as "Aquiares Coffee and Community," the estate is a model of sustainable coffee production, focusing on carbon neutrality through greenhouse gas measurement and offset initiatives verified under IPCC norms. The farm also contributes to biodiversity with protected biological corridors and welcomes global researchers to study agroforestry, soil health, and wildlife in its agroecological environment.
Aquiares’ innovative practices extend beyond the farm, offering a model of sustainability and equity for the coffee industry. Ally Coffee partners with Aquiares to showcase lots that align with these values.
One notable lot features the Esperanza variety, an F1 hybrid developed from Sarchimor T-5296 and wild Ethiopian ET-25. Unique to Aquiares, Esperanza thrives in the farm's terroir and symbolizes hope for coffee farming in a changing climate. This lot is processed naturally, with ripe cherries dried on patios and raised beds over 16–20 days, resulting in a high-quality coffee reflective of Aquiares' commitment to innovation and sustainability.
